Gloria's Spinach Balls

2 pkgs 10 ounce frozen chopped spinach
2 cups dry peperidge farm dry herb stuffing
6 eggs, beaten
1/2 tp thyme
1 tp garlic powder
1 tp black pepper
2 finely chopped onions
1/2 cup Parmesan cheese
1/2 cup melted butter. ( I cut it to 1/4 olive oil, 1/4 butter)

Cook and drain spinach really well to remove all water
Mix remaining ingredients all together and shape into balls
Bake at 350 degrees for 20 minutes
Note: you can fill mushroom caps with this mixture
Also: these freeze really well after you have cooked them

Sweet and Spicy Roasted Pecans

SWEET/SPICY ROASTED PECANS


INGREDIENTS:

4 cups raw pecans
2 Tablespoons brown sugar
1 teaspoon cocoa powder
1 teaspoon chipotle chile powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon smoked paprika
2 Tablespoons butter
coarse sea salt

Strawberry-Mint Sorbet

We seem to be sharing as many recipes as we do stories. Here's another for the collection.

On Thursday evening, which felt more like August in New Orleans than the summer soltice in upstate New York, we refreshed ourselves during break with cups of strawberry-mint sorbet. Everyone loved it ancd requested the recipe, so here it is:

Barbara's Best in the World Pound Cake

Barbara Martin brought her best in the world, pass down through the generations, pound cake to  book-making on June 10. In response to popular demand, she is sharing the recipe with the wVw community. It is indeed good eats!

1 lb butter
3 cups sugar
4 cups flour
6 eggs
1 teas vanilla extract
1 teas lemon extract(OR almond OR rum depending on what your taste is or if you want to experiment. I use either lemon or rum)
1/2 teas baking powder (If using sweet butter, add 1/2 teas salt.)
1/2 cup milk

Cream butter and sugar really well. Take as much time with this as you can. Add vanilla and lemon extract. mix well. Now add, alternately, two eggs for each cup of flour. (Sifting flour twice will give a lighter cake.) For last cup of flour, add milk. Mix well, but do not over beat. Batter should be smooth. Pour into a tube pan. Place in a COLD oven then set oven to 350 degrees. Cake should be done in one hour or more depending on your oven. Cake is done when tooth pick in cake comes out clean. Then welcome to cholesterol heaven!! Enjoy!
